F2: So what we're going to do is we're gonna get some really nice fresh New Zealand vegetables, to cook a beautiful dinner tonight. F1: Awesome. F2: Okay Phoebe, we're gonna buy some beautiful fresh (unclear). These are lovely, nice and fresh and (unclear) want it to be looking at these, making sure that these are nice and firm. And we'll go down here and get some beautiful cabbage to go with that as well. There's so much lovely fresh (unclear) at this time of the year. (unclear). F1: Yeah. F2: It's some. I mean all these lovely broccoli and everything that've just been you know, picked in the weekends. Yeah. I mean, lovely big beautiful fresh cauliflower like this is just. F1: Well I like, I love cauliflowers. Oh they are just so fresh and so beautiful. F2: Oh they're absolutely lovely. And then we've got lovely red cabbage here as well. And of course, the favourite green cabbage. We'll grab one of these as well. F1: I'll give you a hand. Opps. F2: Carrots. F1: Carrots. Big carrots. F2: Beautiful. F2: Right Phoebe, now that we've got all that beautiful produce. It's time to get our lamb. F1: Lamb. F3: Hello how can I help you? F2: Hello, yes can we have a lamb shoulder please? F1: Oh how do you choose the cut of the lamb? F2: Oh I really like to choose the shoulder because the shoulder. F1: The shoulders. F2: Got a lot of bones in it, so it gives it a lot of flavour. F1: I see. Okay can we please get one? F3: Yeah okay. F2: Thank you very much. F3: You're welcome. F2: Can see how beautiful, they're nice and fresh. F1: Yeah. F2: Fresh New Zealand lamb. First of all, we have to start with some chickpeas. Now, these chickpeas are dried. So you open up the bag, you'll see that these are all nice and very very hard. F1: Can I have one? F2: Yes. Are very very hard. And what we have to do with these now is soften these. F1: 小豆子。 F2: We can either do the softening by leaving them in water for two days, or cooking them on the stove first. F1: Oh I see. F2: So we're gonna cook them on the stove. F1: I see. And what are the usual ingredients to do the. F2: (sneeze). Excuse me. F1: It's alright. F2: That's happened when you got a cold. F1: 我刚刚甜点没有讲得很好。 F2: Okay. F1: Okay so. I'll ask the question. F2: Yeah. F1: So Rachel, what are the usual ingredients for hummus? F2: Okay so hummus is a really easy recipe because it's not a lot of ingredients, only chickpeas and olive oil, good quality extra virgin olive oil, salt and pepper, and a little bit of garlic. And then you just finish it with a little bit of parsley. Very simple. F1: Wow, that sounds very simple, but yet delicious. F2: Extra delicious and incredibly healthy as well. F1: Wow, okay. So I'll give you a hand. F2: Okay, let's start. Okay we're starting with the chickpeas. Now you can see that these are very very dry, and we have to soften them. F1: By using? F2: By either put them in the water for two days or we need to put them in the pot. F1: Okay. F2: So what we're gonna do is we're gonna bring a pot, and we're gonna put all of these chickpeas into the pot. F1: I got some here as well. F2: Alright. F1: Hey. F2: And we just fill it up with water, and all we do is put it, about twice as much water and as we have the chickpeas, and we put it on the stove. And we put a little nose, and we just leave those there until they're soft now. F1: Yeah. F2: But in the meantime, we can get ready with our other ingredients. F1: I see. F2: Okay here we got our beautiful New Zealand lamb Phoebe. F1: 好,我们现在要开始料理我们的羊肩的部分。 F2: So what we wanna do is first of all, if you take one of these. F1: Okay. F2: Papercloths, and dab it right down like this. We want to take the moisture out. F1: Okay what is the purpose of doing this? F2: Because we want to take all the moisture off the top of it, so that when we put the olive oil, and the salt and pepper on it, they will become a nice crispy top. F1: Oh 我了解了,所以我们现在呢,是要帮这块羊肩擦汗,然后我们做这样的道理的呢,是说等一下我们加入我们的olive oil跟我们的garlic,跟我们的一些sauce之后呢,它可以马上地入味,然后让这一个,整个的表面呢,形成一个非常酥脆的一个表面。 F2: So what we want to do now, is just break (unclear) a little bit of garlic like this. And then. F1: Yeah. F2: I will show you what we do next. Now, this a little trick that I learned a long time ago. You just squash the garlic with the back of the knife like this. And then we want to peel it. So if you want to start peeling that, that'd be great. F1: Yeah I can do that. F2: Thank you. F1: 我们现在,我们刚才是用刀的,刀的侧面呢,把这个garlic,把它们剥碎,把它们碾碎,这样子就可以比较好的把它的表皮给去掉了。 F2: And what I'm gonna do here is make some little incisions like this in here. And we're gonna poke these pieces of garlic. F1: Wow. F2: Into the limb. F1: This is so cool. F2: Well, the great thing about doing this is this gives it a lot of flavour, garlic flavour. F1: 刚刚Rachel教我们了一个小技巧呢,就是我们把,我们把我们的蒜的表皮剥掉了之后呢,我们要像是,人家说是挤青春痘,可是我们是把青春痘种回去我们羊的表面。然后Rachel告诉我们说,这个做的原理呢,就是之后这个羊,它会更入味。 F2: Yeah and, once we finish this, all we need to do is put some olive oil on the top, put some salt and pepper and then we're gonna put it into the oven which is fantastic. F1: Wow, this is actually quite easy. F2: Yeah, it is very very easy and this is something my family have been doing for many many years. F1: Wow. F2: I came from a farm, so I'm very used to do, you know, working with meats. So we've taken from the garden, and we that underneath. And then bits of garlic that we've got left, underneath here. F1: Still got two more here. Okay. F2: And then, what we do now is that we take our olive oil, if we can get the lid off. F1: Hahaha. F2: Right, so my hands are greasy now. F1: I can help you with that. Oh. F2: Oh, got it. F1: We got it, yeah. 我们撒上一点橄榄油,最天然的橄榄油,然后我们上面呢,铺上一层我们刚刚从garden里面摘的迷迭香,do we want more? Or should we? F2: Yeah, we can put that one on the top like this in a minute. F1: 让我们来看看。 F2: We always put a little (unclear) water in the bottom. F1: 放一点点的水。 F2: And the reason for that is that it gives the meat a lot of moisture. So this meat is room temperature, and that's the key to putting this meat in the oven like this. Room temperature. F1: 所以Rachel告诉我们另外一个小技巧呢,就是我们的羊肉呢,要选用在室温的羊肉,就是如果我们家里是已经先买好羊肉呢,记得把它拿出来,让它退冰了之后,我们用室温的羊肉放入烤箱,这样才能做出最美味的羊排,羊肩。 F2: Right, so now we have to put it in the oven. F1: Okay. F2: Okay so we heat the oven up to 180 degrees. And then we put that in the oven (unclear). F1: And how long would, how long would it take? F2: Well I like to do mine, between about, depending on the size of it, but if you slow cook it, you can slow cook it at a 150 degrees for up to three hours. F1: I see. Rachel告诉我们,所以我们刚刚已经把我们的羊肩的部分放入我们的烤箱,我们用180度给它烤个两个多小时,如果说我们想要慢煮的话呢,我们可以把温度调低成150度,我们给它烤个三个小时。Okay, so what's next? F2: Okay so now, we've got the chickpeas cooking, and so we're going to prepare our crackers and our cucumber and our tomatoes ready for the next dish. F1: Okay. F2: So let's do it. F2: We're going to look at doing the roast vegetables. So we've got here, beautiful New Zealand yams. F1: 然后我们这边本地种植的红萝卜。 F2: Of course, New Zealand kumara, native to New Zealand. F1: 纽西兰本地种的kumara,我们这也算是一种红番薯。 F2: Yes sweet, what we call a sweet potato. F1: 我们也,他们这边本地人说叫sweet potato,就是比较甜的那种土豆。 F2: And this potato here is called a raw potato. F1: 然后还有我们的,普通的那种土豆。 F2: So we're gonna do now is we're going to peel the vegetables except for the yams, and then wash them and prepare them. F1: Yes I will give you a hand. F2: Great idea. Thank you. F1: Okay, 所以呢,我们现在开始,就是要料理我们等一下羊肩所需要的一些蔬菜,然后我们首先呢,就开始削皮,等一下我们要把它切成碎块状的样子,然后放到我们的羊排的下面,放入烤箱一起烘煮。 F2: My favourite part, looking forward to getting that, the roasted vegetables ready. F1: Rachel you're doing very fast than me. I haven't finish this one. Okay. F2: If you go out the other way, sometimes it's easier to come (unclear). F1: Really? F2: Yeah. F1: Okay I'll try. I'm really that good at cooking. Opps. F2: Well it's always somewhere to start. F1: Yeah. I think I never try red yam before. F2: Oh. F1: This is going to be my very first time, Rachel. F2: Oh this is fantastic. All of these, as you know, these are from the ground, so these are all root vegetables that we're preparing. F1: Do we put any greens in the, with the stove? F2: No, just herbs. Herbs and salt and pepper, and extra virgin olive oil. F1: How often do you cook them? F2: Every single day. F1: Every single day. Wow. F2: Every single day that I'm not on holiday. And that's not that often. F1: Hahaha. Oh Rachel you're funny. F2: So what we need to do Phoebe. F1: Yeah. F2: Is right now, we need to chop them up, and we just (unclear) of the pasnip. F1: So do we need to cut like, into the same sizes? F2: No, no, just leave them around roughly about, this sort of what we call a bite size. So about. F1: A bite size. F2: So with these, we do these differently, because these are cooked at different times, so the potato takes the longest, so we cut this one like this. F1: 所以呢,我们现在呢,我们要把我们刚刚削好的蔬果呢。 F2: (unclear). F1: Revenge. Okay 我们现在要把它们切开,Rachel说我们要把它们切成bite size,就是我们一口可以刚刚好吃到的大小,然后呢,根据每一种的蔬果不一样呢,我们会有不一样的料理方式,像是我们把我们的刚刚的红萝卜以及我们的白萝卜呢,我们把它们切成相同的大小,但是我们的土豆还有我们的甜甘薯呢,要另外料理。 F2: (unclear). F1: Teamwork. F2: Teamwork. Exactly. F1: Yeah, but I think it will be much, will be faster if you do it by yourself. F2: Yeah. F1: Just making a mess. F1: 我们已经把刚刚的,所有的材料都已经切成了块状的,小小的块状,接下来呢,I will help you with that. F2: Yeah. F1: 接下来呢,我们就把我们刚刚切好的东西放入我们的烤盘里面,然后我们就放到烤箱里面去跟我们的羊一起料理。Oh it looks colourful. F2: Yeah looks really colourful. F1: I like the colours. 看这颜色是不是非常的美丽呢?当然呢,如果电视前的观众朋友,你也可以选择自己喜欢的一些蔬菜,不一定要跟这些东西完全一模一样。但是,这是比较传统的新西兰人,他们在煮羊肉会搭配的一些蔬果,但是你也可以搭配一些自己喜欢的东西,当然也是没有问题的。好,我们来看一下。 F2: And now we need to drizzle with olive oil all over them, like this. F1: 然后在我们的上面撒上橄榄油。 F2: Put the salt. F1: 还有盐巴,what about peppers? F2: The peppers? Yeah. F1: Yeah I'll grab the peppers. F2: Yes. The pepper. F1: Deng deng. F2: Great. F1: There you go. Chef. 我们撒上橄榄油,盐巴还有。 F2: And then we. F1: 胡椒粉,简单地做一些料理的动作。 F2: And we can put any fresh herbs, but we just peel those (unclear) like this, and sprinkle it all over. F1: 然后我们在上面撒上我们刚刚从花园里面摘的迷迭香,然后帮这些蔬菜呢,做massage。 F2: Massage. Massage the vegetables. This is called massaging the vegetables. And the reason for that is to get the oil or salt and pepper and all the herbs all over them. F1: And then more, 我们再放更多的一点迷迭香,我们刚刚,Rachel帮这些蔬果做了按摩,做这样的东西的原理呢,是我们让它更好的入味,让这些盐巴还有我们刚撒上去的橄榄油,能够完美地融合在一起,等一下放进烤箱之后,它们的味道就会非常地均匀,吃起来非常的融合。 F2: Yeah, and now this is ready to go in the oven. F1: Hmm, okay let's go. F2: (unclear). F1: Perfect. F2: And then we're going to cooking for at least an hour. F1: 好,我们接下来把我们的蔬果放到我们的烤箱里面呢,它会在里面待一个小时左右。 F2: And also we need to turn the vegetables on a regular (unclear). Because, regularly, because so that they don't stick onto the bottom. F1: 好的,我们刚刚已经把我们的蔬菜放到烤箱,它会在烤箱里面待大概将近一个小时左右。刚刚Rachel告诉我们一个小技巧,就是我们要实时地去把这些蔬菜翻动,这样子它才会每一面考得非常的均匀,非常的上色。 F1: Okay let's start with hummus. F2: Yes. F1: Okay Rachel so what are the ingredients for hummus? F2: So the ingredients are chickpeas, some garlic, salt and pepper, extra virgin olive oil and some lemon. And we combine all of those ingredients to make a beautiful hummus. F1: 好,所以呢,我们的hummus,我们的(unclear)豆沙,主要的材料是刚刚,我们刚刚准备的那些豆子,它现在就在烘煮当中。那另外呢,我们需要的一些,我们需要一些蒜头,还有一些柠檬汁,着以我们的olive oil,然后再加上一些盐巴跟黑胡椒,然后我们就可以把它们,等一下放到我们的搅拌机里面打碎,就可以做出非常非常好的,我们的那个hummus。然后再加上我们会放一点(unclear),再加上一点tomatoes还有cucumber,当一点的配料,然后做成一道非常美味的hummus料理。 F2: Right, so let's get on with baking it. F1: Sure, I'll give you a hand. F2: Okay, great. So now we've cooked the chickpeas. F1: 我们刚刚已经煮了一个小时的,我们的这个豆子。 F2: You can see the difference in size is they've nearly doubled in size. Haven't they? F1: Well, it's quite soft now compare to. F2: Yes. F1: Compare to what we just had. 然后我们现在呢,要来把这个豆子拿去洗一洗。 F2: So what we do now is we're going to rinse those off. F1: Why do we rinse the beans? F2: I just want to rinse them. I always think it's good to rinse anything we've been drying it, and also just want to cool them down slightly as well. F1: Yeah especially you're cooking for the family and friends right? F2: Yes. F1: So we just want to make sure everything is healthy and. F2: And fresh. F1: And fresh and clean, yeah. 所以我们现在把豆子洗一洗,然后除了帮它降温之外呢,我们也希望说它是可以保持最干净,因为自己家里做的料理嘛,我们就希望说它是可以非常的干净美味的。 F2: Right, so now, what we do is we move them into the food processor. F1: 放入了搅拌机。And some garlic and lemon juice. F2: Yes. Yes, so we want to use a little bit of lemon juice. Look at these beautiful New Zealand lemons, right? F1: And they're so big. F2: Big and also fresh. F1: And juicy. F2: Yeah so, little bit of garlic and some lemon juice. F1: 好,我们现在呢,就是把我们的蒜头,以及我们的柠檬汁,还有我们的橄榄油,一起放入跟刚刚豆子放进去的搅拌机里面,我们一起打碎料理。Yeah I'll put three, sorry. F2: Yeah, and we put some beautiful olive oil, fresh olive oil. F1: 让我们放一点油。 F2: And we take this off. And we just pour a little bit of lemon juice in. F1: 我们刚刚用了半颗的柠檬,然后把它放进去里面。 F2: So first, we put that in here, and we put it on. F2: And we can see what sort of consistency is, and we need (unclear) a little bit more olive oil. F1: 我们把刚刚的材料呢,都放进了我们的搅碎机里面,然后我们可以一边搅拌,一边查看说是不是需要再加多一点的柠檬汁,跟加多一点的橄榄油去让它完美的搅拌在一起。 F1: 可以感觉到Rachel非常的专业。 F2: A little more olive oil. And now we want to put some salt and pepper in as well. F1: I will pass you the salt. F2: Thank you. F1: And I'll bring you the pepper. F2: Put in salt in there. F1: 然后接下来我们要为这个hummus做一点调味。 F2: About 1-2 teaspoons of salt and about the same of pepper as well. F1: 所以我们大概要放,大概1-2茶匙的盐巴,在加上1-2茶匙的黑胡椒,但是也是一样是依个人的喜好做一些味道上面的调整。 F2: Sometimes, you need to use. F1: A spoon? F2: A spoon just to move it off the side like that, so it can get moving in this. So that's great. F1: 然后我们就实时地去搅拌,让它继续打。 F2: And then we can add a little bit of water to it as well. I'll just do this, and then. F1: 然后差不多拌匀之后呢,我们可以加入一些西洋芹跟一些我们的材料做一些颜色上面的调整。 F1: Okay, how many do we need? (unclear). F2: Yeah a quarter or half of it. F1: Half? Sure. 然后Rachel告诉我大概加入一半左右的荷兰芹。 F2: Okay, and a bit more water. F1: And some water. 加入大概一把左右的荷兰芹,跟一些水,做最后的调整。 F2: Beautiful, a little bit of parsley and it's done. F2: Beautiful. F1: Oh I think we're nearly there. F2: (unclear) done. Okay. Beautiful. F2: RIght, we're done. I'll grab a bowl and we take that off. We'll take over there, and we'll show everybody exactly how it's done. F2: And, what I'm gonna do is (unclear) peel some cucumber. Just like that. F1: Is it enough? F2: Yes, now if you spread them out, cause we're gonna put some hummus on the top of them. F1: I see. We're gonna put a little bit of fresh tomato on the top. F1: On top. F2: And then, we're going to also put a little bit of cucumber. And the cucumber really adds to the freshness of the dish. And then over the top, we put a little bit of salt like that and pepper. F1: Wow, it looks gorgeous. F2: So it looks really magnificent and. F1: Yes. F2: So if we do a, well let's do a plate of these, and then we can sit down and have a try, how about that? F1: Yes that sounds good. F2: Sit down and have a, have a drink something nice and try it out lovely hummus. F1: Okay yeah, sure sure Rachel. Let's do it. F2: Okay let's do it. Let's spread a few more out. F1: Yeah, sure. I think I just took too many, I'll put some back, and then I'll keep helping. F2: Yeah. Alright. F1: 好,我们一样呢,就是在每一个饼干的上面涂一点我们这边新西兰本地的hummus酱,它的英式豆沙,然后我们在上面放上切得很薄的黄瓜以及我们的番茄。可以看就是一道非常美味的,颜色非常缤纷但是又健康的一个小餐,小餐前菜。 F2: Starting to look delicious, isn't it? F1: Yes indeed. F2: Okay Phoebe, well what we're gonna do is a nice easy dessert, which is what we like at the end of dinner. We've got some cream here that we're going to work, some marshmallows, some berries, some mixed berries, and we're gonna top up with the (unclear), little New Zealand wafers. F2: So we've got chocolate, strawberry and vanila wafers on the top, and then we just add a little bit more cream like this. And voila, we've got the dessert done. And if you use an olive oil, you can use it in anything, whether you're roasting vegetables, whether you fry. If you got fresh olive oil like this one here, then you can use it in any (unclear). So we never have olive oil that's old and (unclear), and many of the oils that are imported into New Zealand, in 3 and 4 and 5 and even sometimes longer (unclear), so these, it means that all the goodness is gone out of the olive oil. F1: It's actually quite sweet, like I can taste, like the sweetness in the vegetable. F2: Yes exactly. If you boil that, then you wouldn't have any of that flavour in the leaf. So that's why using the olive oil would really brings out the flavour. F2: Okay, let's try it. F1: I feel it's quite interesting, like you're mining all the good stuff, like because you don't know like, you can feel like, oh it's a marshmallow, it's a wafer, like you can't really tell. F2: No, no. F1: Until you actually eat them. F2: That's right, and it's what balances the flavour with the, having the berries and the cream, and the marshmallow. It really balances the sour and sweet flavours, and then the wafer biscuit at the end to give it a nice little crunch on top. F2: Oh I'm glad you're really enjoying. It's a tremendous easy in to a great day, isn't it Phoebe? F1: Yes. F1: Okay Rachel, tell me more about yourself. So how have you become so good at traditional home cooking? Has your family play a part? F2: Oh definitely, definitely. I've been actually cooking since I was 4 years old. And so I've got a good few years of cooking under my (unclear) now. And many of my jobs that I've had internationally are actually been involved, you know, in cooking as well. And my aunt tells a very funny story. She remembers seeing me at the age of 4, with my chair, just like what we are sitting on, push up to the stove and cooking the whole family meal at the age of 4. So. F1: Wow, that's. But you must be really talented right? F2: I suppose talent comes from a lot of practice. I've been practicing, I cook pretty much every single day. So. F1: Since you were 4? F2: Yeah absolutely. So practice, practice. If it doesn't work the first time, there's always second and third time. F1: And also, so how did (unclear) of cooking leads you creating your food products and also your business? F2: That's a great question. The thing is, I'm really passionate about food, so that passion was, I thought to myself, right, if I'm so passionate about food, then why don't I start up a company called NZ Premium Food, where we can develop products for not only New Zealand does, but we could actually sell them internationally as well. F1: I see, so for you (unclear), NZ Premium Food, how did it began and where did the initial idea comes from? F2: Oh that's a really good question. You know, I meet a really great guy called Paul, and he had a real love for New Zealand, extra virgin olive oil, and he asked me to come and join his business. And so, I already have a passion for food, so we both (unclear), so we can tell a really good story, coming from the same place. And we both have the passion for, a love for food, so that's how it actually began. F1: Yeah exactly. F1: So have there been any difference in the food industry recently that has influenced your, the development of your food products? F2: Phoebe, in the last ten years, there has been a lot of movement towards 100% natural food. And what I mean by that is we're talking about clean food, food that doesn't have any addictive or any preservatives or any (unclear) in them. So I'd have vow for it that our produce doens't have any of those things. So we want, you know, we wanted to create real food, food that is food. Real 'food' that is food. Cause as we know, now there's so much food out there that aren't actually really food. F1: Well you can read from the news sometimes, like you thought that you're having, of outside, for example, you're eating beef, but it's actually not beef. Or like you read the news from, regarding, for example, the chicken nuggets. F2: Yes. F1: But it's actually not chicken, like food is not really food. F2: That's right, and I think really, we need to go back to the basic, and that was the whole raising for us to starting up NZ Premium Food. And going back to the basics. And creating products that are just natural and real New Zealand food. And so that gave us the opportunity to develop those products first, and then move on to some other lines, particularly for our international customers. F1: So how has a transition towards a market place influence the marketing and promotion for your food products? Not just in New Zealand, but also as you mentioned, internationally. F2: So in New Zealand, traditionally, our product is sold through food service, which is hotels, restaurants and cafes, throughout the whole of New Zealand actually. And I think that, if you can sell your products to top chef or a very good cook in a cafe, it shows our consumer that's, at the end of the day, their food is trusted. So it was very important to us to start initially in the food service sector in New Zealand. And really develop a loyal following for our products. And now, we have many consumers asking us where they can find our products here in New Zealand, and so then we thought what we've done this well here in New Zealand, what are the opportunities internationally. So for the last 5 years, we actually have really researched and studied the market in China. And we're glad to say, in the last years, it's taken 5 years, but we can say in the last year, it's really paid off because through our marketing campaign on WeChat and social media that really, the Chinese consumers use, we now have a really really good following through their channel. And in particularly, in the dark old channel where resellers from New Zealand are traditionally selling to consumers in China as well. So we're utilizing a very different marketing strategies for (unclear) that seem to really pay off for us, which is great. F1: So Rachel, how have you overcome the challenges that working with China? F2: Oh yeah, if I have knowing what I know now, perhaps I wouldn't have entered the market, but it is been such a real eye-opener, and I'm so glad that we have because, first of all, we've built an amazing relationship with some great people in China. However, the regulations sort of it, the guest, government system and processes are extremely difficult. And with the regulation changes constantly, we have to stay (unclear) of those, and also, of course there's a number of limitation for, being able to export food from New Zealand to China, so we've yet to overcome all of those challenges, to be able to export, but I'm pleased to say that I've done it, and we'll carry on in exporting to China. F1: It's awesome. My last question. F2: We have some products, extra virgin olive oil. F1: Do you want to talk a bit, more about that, cause my last question was about your future goals and then. F2: Your what? F1: Your future goals. F2: Oh the future, oh no probably talk about, more about the products. F1: The products, okay. So should I just say, can you talk a bit more about your products? ?: Yeah we're rolling. F1: Can you also tell me a bit more about your products? F2: Yes, now it's me gonna stop. Is this interview before we're cooking or afterward? F1: Afterwards. F2: Afterwards, so this is after we, something relaxing, after dinner, is it? ?: Yeah yeah. F2: Okay, okay, okay cool. It's alright. Well we're going. F1: So can you please tell us a bit more about your products? F2: Yes. First product that we chose, of course was our foodies extra virgin olive oil, and this is a fantastic product, because we have a (unclear) up in Northland, and in Northland, there is no frost, so it means that the olives are produced in a premium environment, and from there, it produces premium extra virgin olive oil. And so what that does is that it gives a really really smooth and fruity flavoursome taste. And I think you'd agree. F1: Yeah. F2: From some of the things that we did with the olive oil today, how much it brought the flavour out of the food, and it was particularly a product that I wanted to use, because as we know in the mediterranean (unclear), they only use extra virgin olive oil and they don't have any heart disease over the year. Excuse me. So, so we wanted to also start with a very healthy product, and if you use the latest season, which we always do, so that means that we use only the latest olive oil from the trees that is produced once a year. We don't have any old or rented oil. It means that polyphenols are very very high, and then the antioxidants that look after our skin and as you can tell, I'm 99 years old. F2: No you aren't. F1: So it must be all that olive oil that I'm having to keep such good skin. The second product, we decided to utilize another fantastic sustainable resource here in New Zealand, which is our solid dried salt. And the reason why we chose this particular product is that it's actually organic, and it's 100% sustainable. So a lot of salt around the world is actually mined, and in this case, this is actually dried, solid dried, and you know, it's sustainable product and as we know, we all need salt, whether it's for ourselves or whether it's in the cooking, we still need it. So it's a very, another very important ingredient. And then, thirdly, we develop the little New Zealand wafers. And you probably think, oh that's quite a different product from the other two that you've got. But we got an opportunity to work with a fantastic distributor up in China, and they're now very close partners with us. And we develop the wafer biscuit for the (unclear) and in China, and now we're actually bringing that back into New Zealand and taking that into food service and then to retail as well. So, we still got a lot of work in that area. So even though we only got three products, we actually have quite a number of, sorry we've got three different dry goods, we still got a number of products under that, so different sizes and that's often (unclear) to be on which market that we're at. F1: So what are the future goals for your products? F2: So we've just entered the market in Japan, so now we've got some opportunities to work there. And in the future, of course we've got Australia. So this, a lot of opportunities, not only here in New Zealand, but internationally too. So yeah, we'll just be working hard on tying down all those markets. F1: Wow I can see you'll become even busier in the future. F2: Absolutely. F1: Okay, thank you Rachel for having me today, and it's really nice to, nice to meet you and thank you for your lovely lovely meal. Thank you.
