How to Make Creamy Lemon Squares

[howdini - get yourself a guru] Lemon squares are one of my all-time favorite treats. [Creamy Lemon Squares] This version uses Philadelphia Light Cream Cheese or Neufchatel Cheese. And we've simplified the recipe so they're almost as easy to make as they are to enjoy. [Michele McAdoo for the Kraft Kitchens] I've lined an 8-inch baking pan with foil, with the ends of the foil extending over the sides to create handles. The foil lining makes cleanup a cinch. Next take 20 Reduced Fat Nilla Wafers and crush them to make the crust. To crush the wafers, place them in a resealable plastic bag, squeeze the air out, then seal the bag. Run a rolling pin back and forth until the wafers are finely crushed. This tasty crust is a lot quicker and simpler to make than the traditional shortbread crust. Add half a cup of flour and a quarter cup of firmly packed brown sugar. Cut in a quarter cup of cold margarine. I'm using a pastry cutter, rocking it back and forth. If you don't have a pastry cutter, you can use two knives like this. The mixture is ready when it resembles coarse crumbs. Press the mixture firmly into the pan using the back of a measuring cup. [foil crinkling] Then it's into an oven that's been preheated to 350 degrees for 15 minutes. While that's baking, I'm beating one package of softened Philadelphia Light Cream Cheese or Neufchatel Cheese. Mix in a cup of granulated sugar with an electric mixer on medium until well blended. [mixer whirring] Then add two eggs [mixer whirring] and two tablespoons of flour. [knife scraping] [spoon clanking on bowl] [mixer whirring] I used a box grater to grate a tablespoon of lemon peel. Be sure to grate the peel before juicing your lemons. [mixer whirring] Then add the juice and baking powder. [mixer whirring] Then pour it over your crust. Bake it in a 350 degree oven for 25 to 28 minutes or until the center is set. Cool completely, then refrigerate for at least two hours or overnight. For a final touch, sprinkle with icing sugar or powdered sugar, then cut into squares. Delicious lemon taste made with ease. Enjoy. [chimes jingling] [www.howdini.com]
